Gourmet Dinner with Sicilian Wine Pairing at Millesuoli Enoteca in Palermo

Your evening begins as you take a seat at Millesuoli, an enoteca in Palermo, for a four-course dinner centered on the dialogue between kitchen and cellar. Your guide for the experience is sommelier Giuseppe Artale. For each course, he will present a Sicilian wine chosen to complement the dish, explaining the producer, the grape variety, and the story behind the pairing.
The menu is built around seasonal ingredients and follows Sicilian culinary tradition. A past example of the seafood menu included a starter of shrimp and scampi carpaccio, followed by 'anelletti' pasta with octopus ragù, a main course of grilled mackerel with orange and fennel, and a dessert of millefoglie with ricotta and Modica chocolate. Meat-based and vegetarian menus with the same four-course structure are also available.
The wine selection is drawn from a portfolio of over 370 Sicilian wineries, including volcanic labels from the slopes of Mount Etna. The pairing typically follows a progression of four glasses: a Sicilian sparkling wine, a fresh white like Catarratto or Grillo, a red such as Nero d'Avola or Nerello Mascalese, and finally a sweet wine like Zibibbo di Pantelleria or Malvasia delle Lipari.
