This tasting experience is designed for advanced wine lovers and professionals who wish to deepen their understanding of Sicilian grape varieties, winemaking techniques, and the identity of different terroirs, through a representative selection from Favazza Etna Winery.
The tasting includes 4 wines, crafted with a precise and minimal-intervention approach to highlight freshness, raw material, and expressive clarity. The journey compares different denominations, soils, altitudes, and vinification styles, from steel fermentation to more structured aging.
Wines included in the tasting:
Fiurì – IGT Terre Siciliane 2024
Catarratto and Moscato d’Alessandria. A fresh, citrus-driven white with saline notes and clean aromatics, vinified in steel with cold maceration.
Diatrema – Etna Bianco DOC 2023
Carricante and Catarratto from volcanic soils on Etna’s eastern slope. Vertical, mineral, and sapid, with bright citrus and strong terroir expression.
Nùra – Sicilia DOC 2024
Nero d’Avola rosé. Floral and lightly spicy, fresh and linear, designed for balance and gastronomic pairing.
Burkan – Etna Rosso DOC 2020
Nerello Mascalese from the north slope of Etna. Elegant and structured, with red fruit, floral notes, freshness, and a savoury volcanic finish.
Beyond the tasting, Favazza Etna Winery offers the possibility to explore the estate freely, including an organic garden, Victorian greenhouses, vineyard, winemaking laboratory, orchard, and the historic 1971 lava flow. A walking path with descriptive stations surrounds the property, allowing guests to fully immerse themselves in the landscape and philosophy of the estate.

My Sicily of the Volcano
The wines and local specialties accompanied us for more than three hours in the shade of the centuries-old chestnut tree with a breathtaking view of the sea. It is also possible to order à la carte typical dishes cooked as tradition dictates.

Excellent wine with great dinner plate
