Wine Tasting Dinner with Tour at Fattoria di Corsignano in Castelnuovo Berardenga

Your experience at Fattoria di Corsignano begins with a tour of the cellar and a walk through the vineyards, led by a member of the family, Niccolò or his father, or another expert from their team. Their guidance offers an introduction to the estate, its winemaking philosophy, and its organic wines.

You will then take your seat for a tasting dinner. During the summer, meals are served outdoors on the covered portico, which overlooks the swimming pool and the estate’s vineyards. Each course is paired with one of the estate's organic wines, which will be introduced to you at the table. The flight includes Levitate Rosato Toscana IGT, La Coppia Chianti Classico DOCG, L'Imperatore Chianti Classico Riserva DOCG, and the sweet Il Dolce Vin Santo.

The menu, prepared by Chef Roland, highlights the connection between the estate's wines and traditional Tuscan cuisine. It includes a trio of appetizers, two first courses, a main course with a side dish, and dessert. Depending on seasonality, you might be served dishes such as zucchini flowers stuffed with ricotta and pine nuts, a vegetable or asparagus tartlet with Pecorino cream, crostini with liver pâté and apricots, millefoglie with Tuscan ragù, risotto with garden vegetables, saffron, and burrata cream, ravioli with Parmesan cream and pink peppercorns, or pici with farmyard ragù.

Main courses may include Peposo del Chianti with roasted vegetables, beef morsels in Chianti with Certaldo onions, or guinea fowl with Malvasia Bianca and crunchy pistachios.

Desserts may feature apple tart with Vin Santo cream, tarte Tatin with ice cream and cinnamon, or fruit tartlets with vanilla ice cream.
