I Crudi del Lazio – Cooking & Tasting Class at Bottega Minotti

Every Sunday at 4:00 p.m., Bottega Minotti in Parioli, Rome opens its doors for I Crudi del Lazio, a hands-on cooking and tasting course dedicated to the art of raw meat and fish. Guided by Chef Edoardo Minotti, you’ll embark on a 2.5-hour sensory journey that blends territory, technique, and tradition, exploring how to enhance Lazio’s finest ingredients with elegance and respect.
The experience begins with an introduction to the philosophy of raw cuisine, covering the selection of local ingredients, food safety principles, and cutting techniques essential for creating refined, natural dishes.
You’ll then move on to the raw meats of Lazio, preparing two signature dishes:
Pure Beef Carpaccio with I&P extra virgin olive oil, Maldon salt, and Lazio herbs
Beef Tartare with Parmesan Cream and Herb Pesto — a contemporary, flavorful creation blending texture and freshness
Paired with Cesanese del Piglio DOCG, an elegant and spicy Lazio red wine.
Next comes the raw fish of the Lazio coast, featuring:
Pure Fish Carpaccio with I&P extra virgin olive oil, Maldon salt, and lime zest
Fish Tartare with Buffalo Stracciatella, Yellow Cherry Tomatoes, and Pistachios — a perfect sea-and-land fusion
Paired with Bellone del Lazio IGP, a mineral and citrusy white wine that enhances the delicate flavors of the Tyrrhenian catch.
Throughout the class, Chef Edoardo will demonstrate professional techniques for filleting, trimming, marinating, and plating, along with guidance on how to choose the best olive oils and condiments to elevate every dish.
The experience ends with a guided tasting of all four dishes prepared, accompanied by two glasses of Lazio wine, in a convivial, educational setting that celebrates raw cuisine as an expression of local identity.
